Garlic moringa mushroom recipe | Glutenfreewhisk

Personally, I like mushrooms. Having mushrooms in soup as the hero or main ingredient or eating mushroom pasta or having this cheesy mushroom recipe on repeat, it's a win. Packed with nutrients like potassium, magnesium these are good for health and to double the goodness of this recipe I have added some fresh moringa leaves. Moringa is a super food and is the talk of the town nowadays, everyone is trying to add it in their meals in some way or the other as it is a super healthy and a powerful ingredient.

I add moringa leaves to my aarhar dal or toor dal with curry leaves in the ghee cumin tadka and it is exceptional. Also, kneading freshly chopped moringa leaves with maize or jowar flour and making roti out if it is another most common moringa recipe at my home. As I said moringa is a super food, so I try to add it in my diet as often as possible. Moringa is rich in Vitamin A, C, E and packed with calcium and magnesium this garlic moringa mushroom is a healthy and nutritious recipe that you should definitely try.

These white sauce cheesy mushrooms are delicious. The note of garlic and oregano, the creaminess of cheese and the sharp taste of moringa that goes so well the meaty mushrooms. Recipe like saag chicken or saag gosht are really famous in Indian cuisine and thus for vegetarians these meaty mushrooms with moringa leaves is the perfect combination.

Also, my recipe has a gluten-free version of white sauce so you can even use this for pasta or sauteed white sauce veggies or other dishes where you like having a white sauce that is equally tasty but is gluten-free white sauce. Mushrooms go really well with cheese. The famous cream of mushroom soup recipe is liked by many soup lovers including me. INGREDIENTS -

 

250 gm Button Mushrooms, Chopped

1 tbsp Ghee

1 tbsp rice flour

Handful of fresh moringa leaves, chopped

4-5 cloves of garlic

1 tsp Cumin seeds

1tsp black pepper powder

Salt, to taste

1tsp roasted cumin powder

Water

1 cheese cube, grated

1 tsp Oregano mix


METHOD - 


1. In a pan lightly roast the rice flour in low flame. You have to stop roasting it to a point where its color will start to change. Set it aside. 

The motive is to lose the raw taste of rice flour by doing this else the taste of flour will overpower the recipe. You don't want its color to change as it will turn brown sauce instead of white sauce.


2. In a saucepan, add ghee. Once it is hot, add the cumin seeds, let them roast. Then add garlic, roast them as well followed by moringa leaves. Cook them for a minute then add chopped mushrooms. Mix well.


3. Add a little salt to allow mushrooms to leave its juices and cook the mixture in a low flame till mushrooms are cooked and water is evaporated.


4. Add roasted cumin powder, black pepper powder and adjust the salt. Give a final stir, cover and set aside.


5. Take the roasted rice flour again. Add oregano to it and water to make a thick paste. Once it starts to come together add grated cheese and switch off the flame. Whisk regularly to allow the cheese to melt and to ensure no lumps are formed.


6. Once the paste is thick and coat able add the cooked mushroom moringa to it and mix well to coat everything in this cheesy mix.


7. Serve hot with rice or chapati.


Note - One thing that I have noticed while using moringa is that it loves oil/ghee and it absorbs it all. To help cook it use only that much fat as is required, make sure the flame is low and do not overcook the leaves.
