Ragi Coconut Mug Cake | Glutenfreewhisk
Ragi is such a nutritious millet and ragi flour has been in my diet from past 4 years. Last winters, ragi mug cake with so many versions were my almost every day go to dessert and I have enjoyed every bit of it. In today's recipe I am sharing one of the best and simplest versions of my Ragi mug cake that bakes so quickly in a microwave that I am sure it will be your daily dessert indulgence. The best part of this recipe is you mix everything in the same mug you want to microwave so no extra blunder of utensils.
Ragi flour is dry and requires good amount of ghee (oil for some or even butter for some but I prefer baking in ghee whenever I can). It also has an early, muddy taste and texture that can put you off initially while trying or even enjoying millets in your diet, but I have always liked millet flour, and I enjoy eating them. In this recipe I am replacing ghee with ghee residue or Mawa as it is called. It is a brown colored soft, ghee laden thing that you can actually eat. I have been eating it forever and I really like it. Although you should eat in moderation and I eat only a few tbsp with my mug cakes.
This is a completely optional ingredient, and you can use regular ghee or butter but whenever I have this at home, I use this only or make my ragi mug cake on the same day my mother extracts ghee at home. Nostalgic right?
Aa few ingredients that are regular are cranberries, desiccated coconut, nuts and seeds and cinnamon powder. These are non-negotiable and I can't imagine my mug cake without these. And making my ragi mug cake, a choc lava ragi mug cake is also what I always do. I use Amul dark chocolate for this, and it will be oozing, gooey center that you will want to keep for the last. Because I always eat around the center and keep that chocolaty wonder for the last. If you know, you know.
This recipe requires a microwave for super quick one minute cake recipe but if you don't have a microwave, you can even bake it in the oven. Instead of using a mug, use normal cake tin but smaller in size and bake in an oven for 20-25 minutes at 180 degrees Celsius or until the skewer comes out clean. Another important thing that I noticed while baking mug cake in microwave is that if you place 3 separate mug cakes together to bake in microwave for 1 minutes the cake won't bake. It will be uncooked or unbaked. So, what I have gathered is 1 minute for 1 mug. If you are baking 2-3 mugs together then go about it accordingly.
I keep 20 seconds extra just to be extra wary that's all. I stop the timer after 1 minute and a few seconds anyway. I like being extra careful. Just saying.

INGREDIENTS -
3 tbsp Ragi flour
1 tsp cinnamon powder
3 tbsp desiccated Coconut
2-3 tbsp Ghee or use my secret ingredient the homemade leftover brown thing after extracting ghee, Mawa
Brown sugar, as per taste
half a tsp baking soda
3 Chopped almonds
2 tsp melon seeds
2 pieces of Dark Chocolate (or any chocolate of your choice)
Chocolate Chips to decorate
Chopped almonds and cranberries for garnish
water to make the batter
With so many options to buy from I am using Nutty Gritties dried cranberries and they are soft, delicious, and my go-to.
METHOD -
1. In a microwave safe mug add the flour, coconut, cinnamon powder and mix. Now add sugar, baking soda, ghee/mawa and water and make a thick but pourable consistency batter. Add the melon seed and almonds and give it a final mix.
2. Insert the 2 chocolate pieces in the center and decorate with chocolate chips and chopped almonds.
3. Microwave it for 1 minute 20 seconds on high. Your Ragi mug cake is ready. Indulge! 1 minute 1 mug cake recipe.
4. Garnish with more chopped cranberries and chocolate chips and indulge.
Note - Make sure the mug is only halfway full as the cake while baking will require space to rise. So, select the mug accordingly, so that the batter while rising does not ooze or pour out.
