The last post that I did was of a whole wheat chocolate coconut cake in olive oil and following the same recipe I have made these beautiful small cookies. As I baked that for my sister, which she took away, so I had to bake something for my parents. So, I made the batter in large quantity and separated a thick gooey batter that will allow me to bake around 6 cookies and rest batter I used for making a cake and changed its consistency to comparatively runny but not too much, perfect for a cake.

But I will share a full ingredient recipe below for Whole Wheat Chocolate Cookies in Olive oil that will make up to 9-10 cookies.

As fancy using olive oil in baking sounds, it is rather healthier option than butter. When I bake, I generally go for homemade ghee than butter, but olive oil is also a good option as it is mild with no characteristic smell or lasting, pungent flavor.

Cookies are really quick and easy recipes to make but as easy and quick they are they disappear too rather quickly. I prefer baking cakes over cookies, but cookies have their own fun for sure.

For gluten free cookies option, we can replace whole wheat flour with gluten free oats, some grounded almonds, desiccated coconut, sweetener of choice and olive oil. 


INGREDIENTS

2 cup whole wheat flour

1.5 cup Brown sugar or as per taste

1 cup olive oil

1 big banana, mashed

1 tsp baking powder

1 tsp baking soda

1 tsp vanilla essence

1 cup dried coconut, grated

Half cup or 3 tbsp unsweetened cocoa powder

Handful of chocolate chips and some for decoration

Milk or water as required to make batter


METHOD

1. Pre heat the oven at 180 degrees Celsius. Grease a baking tray with butter or ghee.

2. In a bowl sift in the flour, cocoa powder, baking powder, baking soda. Add the dried grated coconut, sugar followed by vanilla essence, oil, mashed banana. Bring all this together in a form a good thick batter consistency using milk or water as per your choice. Now add some chocolate chips and lightly mix the batter again.

3. Place a semi flat ball of batter on greased baking tray with spacing between each cookie, decorate with chocolate chips and bake in the oven for 15-20 minutes at 180 degrees Celsius.

4. Enjoy with tea or coffee your freshly baked and homemade whole wheat chocolate and coconut cookies.
