Blueberry Cupcakes with White Chocolate Frosting

Cupcakes are the go to recipes when you are in a hurry to prepare something for a birthday party or some special occasion when you have a lot more to do than think for a dessert. They come in handy as these do not require much preparation. Just a bowl and you are sorted. All you have to think of is the perfect icing and beautiful cupcake paper liner and voila! They require only 8-12 minutes to bake. 

Even if not for any occasion at all. Just make them for yourself . Why should there be an excuse to bake. Why not just bake to Indulge.

Thinking of what all to add to make it different and a new recipe. I just chose the ingredients that are available around me. In this recipe I have opted for dried blueberries as I always have them in my home. Moreover, fresh blueberries are not easily available in my hometown and all that seasonal thing that we should follow is another thing so I choose dried berries. If you have fresh berries,  these irresistible muffins will be even more tasty and you will thank me for this marvelous creation.😋 

Cupcakes can be enjoyed with your evening tea or for breakfast and even for your desserts. My Gluten free chocolate muffins and winter treats of Ginger-Carrot cupcakes are absolute bliss. To add to this blissfulness here is the recipe for Blueberry Cupcakes.


INGREDIENTS

For Cupcakes

2 cups whole wheat flour

1 cup oats

1/4 teaspoon baking soda

1/2 teaspoon baking powder

50gms melted unsalted butter

3-4 tbsp brown sugar (as per taste)

6-7 drops vanilla essence

Milk or water to make batter

Handful of  Blueberries, dried

For Icing

3 tbsp Melted white Chocolate

1 tbsp Melted unsalted butter

Blueberries, to garnish


METHOD-

  • Pre heat the oven at 180 degree Celsius. Grease and line the Muffin mould with paper cupcakes mould and set aside.
  • In a bowl mix all the above cupcake ingredients and make a nice medium thick batter. Add milk or water as required.
  • Scoop out spoonful or more of batter into each cupcake mould, make sure you leave a little space at the top to allow them to rise.
  • Bake for 10-12 minutes. Once done allow them to cool on a rack outside.
  • To make the icing, mix the warm melted chocolate and butter and pour as much icing as you like over the muffins once they are baked and cooled down.
  • Note: Make sure all the ingredients are at room temperature.
