RECIPE:

INGREDIENTS:

7-8 Raw Mangoes (as they are small in size)
100 ml Fresh Cream
10-12 Fresh Mint Leaves
3 tbsp Powdered white Sugar or as per taste
A pinch of White pepper
A pinch of  Roasted Cumin Powder (Optional)
50 ml Chilled water
Ice Cubes

METHOD:
  • Peel the skin and chop the Mangoes roughly, removing the inner seed part and arrange them in a baking tray and roast them for 20-25 mins at 180 degree Celsius.
  • Allow them to cool and once done put them in a blender with mint leaves, sugar, roasted cumin and pepper powder and water, blend them till a smooth paste is formed.
  • Now add the cream and ice and blend it again unless all combines. You can taste it and add sugar if it is still sour for you. Also you can arrange the consistency according to your liking so you can add more water if you prefer. I love it in a medium thick consistency.
  • Once all combined pour in individual glasses and serve chilled garnishing with mint spring.
Note: The cumin powder is optional so if you do not wish to add it, you can skip it but I personally like its flavor.
Generally you can roast the mangoes with the skin and later pulp them out but I like to peel and chop them and then bake as it makes the work easier.
Also if you do not have an oven to roast the mangoes you can boil them in water also and then squeeze the pulp.
