Gluten Free Muffins
Muffins have become my new favorite as they are easy and quick to bake, and you can bake them with whatever ingredients or flavor that is your favorite. So, this time I am sharing an easy muffin recipe that has everyone's favorite ingredient chocolate, and they are gluten-free. Gluten free stuff or food items are very much in demand now, one of the major reasons being people are allergic to gluten, and another reason is it is trending as it improves your digestive system, improves cholesterol level and many other things. So, I also decide to use the basic ingredients that are always available in our kitchens and are Gluten free and these amazing muffins are made from oats and rice flour.
I have previously updated the gorgeous " Ginger Carrot Cupcakes " recipe that is amazing yet simple to follow. Cupcakes or Muffins are not only for dessert but they can be for your breakfast when you crave for something sweet in the morning that is also healthy. It is said that you should consume carbs in the morning that keeps you energized for the whole day so I guess these muffins fit just perfectly in your breakfast menu and you can bake them a night before and just enjoy in the morning with a cup of your favorite beverage in the morning.
These are eggless muffins, and they just bake in 8-10 minutes maximum so if you are craving for some muffins in the lockdown so bake and indulge.
METHOD:
INGREDIENTS:
2 cups Oats
1 cup rice flour
30-40 gms unsalted butter, melted
3 tbsp Brown Sugar
Half tsp baking soda
Half tsp baking powder
Half tsp Vanilla essence
1 Cup Milk or as required, to make batter
Loads of dark chocolate chips
- Pre heat the oven at 180 degrees Celsius. Grease and line the muffin mold with paper cupcakes mold and set aside.
- In a bowl mix all the above ingredients and make a nice medium thick batter.
- Scoop out spoonful of batter in each mould not up to the top but leave some space to allow them to rise while baking. Top them with some chocolate chips.
- Bake in a preheated oven for 8-10 mins. Allow them to cool and enjoy warm or cold.
Note: Make sure all the ingredients are at room temperature.
