Gulkand Cake with Chocolate Ganache
Yes, this is kind of a fancy cake by the name but the inspiration behind it can be the very trending Chocolate pan (which I am just assuming) and you all must have tried chocolate pan I believe, if not try this amazing cake that is so simple and the flavors are so refreshing that you will love to bake it again. Else you can also try the Chocolate pan.
I baked this cake on my Dad's birthday and the cake came out to be so good that it was finished very quickly. It is an eggless cake and the Gulkand I used is from Haldighati, Udaipur, where the locals have their own small distillation plants at their home to extract rose water and prepare this amazing Gulkand. This Gulkand is made of rock sugar or mishri as we call it, which is considered to be healthier as compared to the normal sugar that we consume daily. So its kind of a healthy cake with amazing taste.

INGREDIENTS:
For Gulkand Cake:
3 tbspful Gulkand
250 gms Condensed Milk
250 gms Wheat Flour
Half tsp Baking soda
1 tsp Baking Powder
60 gms Butter, Melted
Milk, as required to make batter
For Chocolate Ganache:
100 gms Dark Chocolate
30 gms Butter
120 ml Whipping Cream
METHOD:

For Gulkand Cake:

For Chocolate Ganache:
100 gms Dark Chocolate
30 gms Butter

METHOD:
- Pre - heat the oven at 190 C. Grease a spring form baking tin with butter and set aside.
- For the cake batter, add the butter, gulkand and condensed milk in a big bowl and mix well. In another bowl sift the flour, baking powder and baking soda. Add these dry ingredient in the above wet mixture. If the batter is too thick add milk as required and make a nice flowy thick cake batter.
- Bake for 30-35 minutes or until the skewer comes out clean.
- In the mean time for Chocolate Ganache, melt butter and chocolate in the microwave or in a double boiler, being careful not to burn the chocolate in any way. Allow the mixture to be cool.
- In another bowl whisk the cream until soft peaks are formed. Now add the cool Chocolate butter mix to the above cream and fold it very lightly.
- Once the cake is baked, allow it to cool in the cake stand completely. Demould the cake and cover the cake with Chocolate Ganache and serve in slices.
Note: All the ingredients should be at room temperature for cake and for Ganache.
