Vanilla Cheesecake
Who doesn't love cheesecake!! The recipe I am sharing today is a simple cheesecake with just a few ingredients as I am keeping it simple by just using vanilla to flavor it. It is a baked cheesecake and it is really soft that melts in your mouth with a slight crunch of the biscuit base that just completes it.
It is not a very sweet cheesecake as the base is a bit salty because of the butter in the biscuit layer and the cheesecake is not very sweet as I prefer it to be just sweet and just perfect.
There are so many cheesecake variations that you can choose and so many flavors can be added to your cheesecake but the cheesecake recipe that I am sharing is simple with one of my favorite ingredient that is vanilla and to add more beauty to it I am using the perfect combination of coffee and dark rum over the base of my cheesecake. So I am sure that this will make you go ahead and try this recipe once for sure, just to make it again and again.

INGREDIENTS
For the base:
22 Marie Lite Biscuits (Just to be exact)😀
50 gms Soft Butter
2 Spoonful Instant Coffee
30 ml Dark Rum
60 ml Hot water
For the Cheesecake Filling:
150 gms Philadelphia Cream Cheese
1 Egg
15 gms Flour/Maida
50 ml Cream, Whipped into soft peak
Half teaspoon vanilla Essence
Powdered Sugar as per taste
For Garnish:
Blueberries and Mint Leaves
STEPS:
Note: Decorate as you like it and you can even serve it with some homemade compote like blueberry or raspberry compote.
Instead of Marie Biscuits you can definitely choose Digestive Biscuits.

For the base:

For the Cheesecake Filling:

1 Egg
15 gms Flour/Maida
50 ml Cream, Whipped into soft peak

STEPS:
- In a food processor add the biscuits and soft butter and mix till the biscuits and crumbled and incorporated perfectly with the butter. You can even use a rolling pin and crush the biscuits first by beating them in a ziploc bag and then mixing the butter to it.
- In a greased tart mould, make a nice layer of biscuits (I have also covered the sides of my mould) by pressing it nicely on the base.
- Now make the concoction of coffee, water and rum and spread it nicely over the biscuit layer using a brush. Refrigerate the tart mould for 10 minutes.
- Preheat the oven at 180 C and bake the biscuit layer for 10-12 minutes.
- In the meantime prepare the cheesecake filling, beat the egg and half of the sugar in a bowl using an electric beater. In a separate bowl take the whipped cream add the cream cheese, vanilla and whisk till it becomes soft. Now add rest of the sugar and flour and beat again.
- Pour this mixture onto the baked biscuit layer and bake again at 180 C for 20 minutes.
- Allow it to cool, demould it and decorate and serve slicing it.
Note: Decorate as you like it and you can even serve it with some homemade compote like blueberry or raspberry compote.
