Nutty Crunchy Bar
For all those working men and women, for all kids going to school in a hurry without breakfast and for all morning fitness enthusiast this is the recipe for you filled with the richness of peanut butter, the crunch of cornflakes and nuts and the blandness of oats. This is a dish that is loaded with lots of fiber, carbohydrates, energy, protein and the goodness of dried berries and fruits. In today's lifestyle it has become necessary to consume seeds and nuts which not only provide taste but are also loaded with so many health benefits that you cannot ignore them. If you cannot incorporate them in your daily meals then this bar is the best way to fill your body with their benefits.
Its a one pan recipe and a really quick one to prepare which anyone with no cooking-baking expertise can make. One of my favorite chef once said that Indian food is all about "aandaza" or guess and I totally agree with it as we all see our mothers cooking without measurements and that's what I mostly do, so when ever I write a recipe it gets to my nerve that I will have to mention the measurements. But anyways I try to mention the approximate quantities that you can change and vary according to your requirement. I am mentioning this in this recipe as I have made this bar so many times and I never cared to measure the ingredients I use, so at the end its all about understanding the recipe and as for this one since we are making a bar so the peanut butter should be in such a amount that it binds and coat all other ingredients and when left to set, it sets.
So at the end even if it does not sets just eat it with a spoon (and yes it has happened to me also) as every mistake prepares you for the coming one. So try it out and go for it, make a big batch and check you "aandaza".
The nuts and dried berries that I have used can be changed according to your liking and the variety of seeds and nuts that you want to add can be done. The variations can be pumpkin seeds, pine nuts, melon seeds, chopped almonds, cashews, roasted peanuts and the list is long so play and add and fill your morning with the blast of energy that keeps you going throughout the day.

300 gms Oats
3 fistful of Cornflakes
3 tbsp of Roasted Flax seeds
2 tbsp Chia seeds
15 Chopped blueberries, Dried
10-12 Chopped Cranberries, Dried
10 Raisins, Chopped
2 tbsp Honey or according to taste
2-3 tbsp Peanut butter, Creamy
Butter or Ghee for greasing

INGREDIENTS:

METHOD:
- In a thick bottom pan add oats and roast the oats a bit till they turn a bit brown, make sure it does not burns. Once done add the seeds and nuts and give it a stir.
- Now add honey and peanut butter and turn off the gas and give the whole mixture a nice mix till all the mixture is coated with peanut butter.
- Remove all the content in a greased silicon mat or a greased flat plate making the edges even and making the thickness as per your requirement or maybe around half inch thick. Allow it to set in a refrigerator for about 40-50 mins.
- Once set cut in the shape of bar or cubes.
Notes:
- I have used plain cornflakes in the recipe as I like and prefer these and I only use them as they add great crunch to this bar so you can use even honey cornflakes.
- I also prefer plain creamy peanut butter but you can obviously use the crunchy peanut butter that contains bits of peanuts in it. For me it becomes too much peanutty so I personally love the creamy one, but you can definitely choose according to your liking.
- You can make the bars and refrigerate them for a week or more or can also keep them at room temperature for 5-7 days depending on the weather, the colder the better.
