Pumpkin Pie
Yes it's a Halloween Special and the dessert that I am making is not creepy, scary or like Halloween theme but yes when I think of Halloween all I can think of is hollow pumpkin with lighted candle inside it. So here it is "Pumpkin Pie" which is a perfect dessert to celebrate the day. Although Halloween is not celebrated in India but I do get attracted by this notion of dressing in the scariest way, to ward off evil spirits and kids going home to home asking for "TRICK OR TREAT". It is always fun to adapt and be open minded to learn more, so, for me every festival has its own special food attached to it and celebrating with food is the best part because I love to eat and bake.
We all must have eaten savory pumpkin or pumpkin sabzi and when it comes to dessert we are all aware of pumpkin halwa but now add a new dessert to your list as I am Baking this beautiful Pie with this easiest recipe that will surely make you enjoy Halloween from now on.
I am making pumpkin pie with condensed milk but you can use the combination of brown sugar and milk instead of condensed milk, But for me it tasted best with condensed milk. Also this pie contains egg but for all no egg consumers, in order to skip egg do not opt for sugar milk combination and use condensed milk.
So here goes the recipe!

RECIPE:
INGREDIENTS:
For Pie Crust:
1.5 Cups Maida
0.5 tsp Salt
60 gms Butter, Chilled
Milk as required to kneed a dough
For Pie Filling:
2 Cups Ripe Pumpkin Cubes, Roasted and Mashed
2 Egg
90 gms Condensed Milk, or as per taste
A Pinch of Nutmeg
Few strand of saffron, soaked in warm Milk
Chopped almonds for garnish
METHOD:
Note: You can choose anything for decoration like beaten cream and sugar mix or any fresh fruit like berries with a scoop of vanilla icecream, and the choices are many.
In this you don't have to bake the crust separately and then bake the filling and crust again. It is done together as mentioned in the recipe above.

METHOD:
- To make the pie crust, in a food processor with dough blade, add all the crust ingredients and blend till a soft, firm dough is formed. Or you can even do it with your hands by first rubbing the chilled butter with maida and salt mix till it become crumbly, then use milk to kneed a dough.
- Refrigerate the dough to cool down for 15 mins. Now roll out dough in a thin sheet and cover the pie tin evenly even on the sides. I am using a heart shaped 2-3 inches long so I have rolled it accordingly. Make sure you have clean side so that the pie looks neat after its done. Prick the base of the crust with a fork.
- In another bowl to prepare the filling beat in all the ingredients of the filling with a hand whisk or an electric beater and pour over the crust, not till the brim but leaving just enough so that it does not overflows while baking due to eggs.
- Bake in a pre - heated over at 180 C for 45 mins or till the skewer comes out clean.
- Allow the pie to rest, then demould it, decorate and slice to serve.
